Garlic & Lemon Chicken Chop

After I discovered the wonderful app Copy Me That, for meal planning, recipe keeping and organising which I blogged about recently over here, I have already planned our meal for these 2 weeks.  One of the recipe I wanted to try is the Garlic & Lemon Chicken with green beans and red potato found in and I made it last Sunday.

The original recipe is for chicken breast meat but we are not really a fan of breast meat, I rampaged our freezer and found 2 chicken thigh and decided to use them instead.  Red potato? What is that?  Never mind that, I have russet potato, they will do too.

Well, the chicken chop turned out beautiful and perfect, skin brown and crispy with meat soft, tender and juicy.  The green beans and potato.. hmmm.... well, that's another story *chuckles*

As you can see in the photo below, my one and only baking pan is HUGE, my corning ware pot is too small for the 2 chicken thigh and greens.  No choice, I have to use the baking pan but that did not compromise the taste of the chicken thigh though I think if I use a smaller baking dish with all the ingredients snugly tucked into and against each other, the taste will be even better.

My green beans are grilled dry *opps* and some of russet potato were not fully cooked *double opps* , a friend suggested that I boil the potato first before putting them into the dish for baking.  Good idea!  

Note to self - get a smaller baking pan/dish.

Anyway, since the chicken chop are seasoned with garlic & lemon, I thought I should just make a simple spaghetti tossed with olive oil to go with it.  It would have been a perfect dinner if the side dish were ok but nonetheless it was still a great dinner.

The next time I make this dish I am going to add MORE greens such as broccoli and carrot, I will probably use new potato too and of course to use a smaller baking pan.

If you would like to try this recipe and using chicken thigh too, I grilled it for 40mins instead of 50mins as stated in the recipe because thigh meat are tender than breast meat thus needs shorter cooking time.
And if you want to do it in your air fryer, I think you can do it at 200 deg for about 20mins, open up to check on the chicken thigh and air fry it for another 10mins or so.  I am basing the cooking time on the Philips Air Fryer that I have, I have not done this in the air fryer before and using my experience with my air fryer to give a guage, you may have to adjust the cooking time.  In any case, pull out the basket to check on the chicken and see if you need to cook it longer or not.

Garlic & Lemon Chicken Chop

Ingredients (serves 3)
  • 4 chicken breasts (bones left in, with skin) or 3 1⁄4 lbs chicken breasts (bones left in, with skin)
  • 6 tablespoons olive oil
  • 2 lemons, 1 thinly sliced, 1 juiced
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1⁄2 teaspoon fresh ground black pepper
  • 3⁄4 lb fresh green beans
  • 8 small red potatoes, quartered
1. Preheat oven to 400°F or 200 °C
2. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil.
3. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
4. In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat.
5. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices.
6. Add the potatoes to the same olive-oil mixture and toss to coat.
7. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans.
8. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly.
9. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.
10. Roast for 50 minutes. Remove the chicken from the dish or skillet.
11. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender.
12. Serve warm.

A truly blessed 42nd Birthday

Oh my God! Its nearing the end of September, time simply just seems to be zipping by without me noticing.  With the CA2 exam came and gone at a blink of eyes, I thought I could take a rest for a while but then I was caught up with work and before I can take a breather, there were no fresh air for me to breathe... literally.  The annual haze from our country's neighbour was really bad this time, hitting a record high of at least PSI 250 on some days.

Besides getting all my things ready for the Gardener Days Out Bazzar at HortPark over 2 weekends, I was also busy brewing tea and cooking soup that nourishes the lungs to make sure DinoPapa and DinoBoy does not come down with flu and cough due to the haze because both of them have sensitive air way.  

My blog suffered because I have no time sit down and pen down my thoughts, till now.  My work schedule is looser and the air is better thus I can think properly instead of nursing dry eyes and headache almost daily.

August had been a fun and fantastic month.  Besides our August Giveaway Frenzy which is into its 2nd year, it is also the birthday month of DinoBoy and myself.  I usually do not plan anything for my birthday, not even a cake, such a hassle and waste money coz I can bake a butter cake (my most preferred cake) easily that cost a fraction of the store bought cake.  This year however, it was different, I received a birthday cake from DinoPapa and DinoBoy a day before my birthday.  According to DinoPapa, the boy wanted to get a cake that day because there was a promo going on, he told the dad to get it today so that he can save some money.  Yupe, you heard it right, my 9 year old boy paid for the $20+ Oreo Cheesecake using his Spending Money.  Proud Mama & Papa moments!

And because he paid for the cake, and he knows I have no preference on cake, he got his favourite cake and decided that it should be divided into 3 parts so we can have equal share of the cake.  Look at his very satisfied and happy expression.

My birthday happens to be on a weekend, my best way of celebrating is to cook a sumptuous dinner and enjoy it with my family.  It was only 3 dish + 1 soup dinner of air fired Turmeric chicken mid-wings, Thai basil minced pork, stir fried nai bai with prawns and salmon with toufu, fishball & golden mushroom in miso soup,  but every one enjoyed it.

The next day our PT cleaning auntie came over and gave us a box of Blueberry Muffins, "for my birthday" she said.  Wow~ so touched! And the muffins are really delicious, I ate 1 and the rest were shared among DinoPapa and DinoBoy.

Last but not least, I received a beautiful rainbow birthday card from Ren, a friend who never forgets my birthday since the day we met some 2 decades ago. I'm truly blessed to have her as a friend, may our friendship continue forever~

Also, not forgetting the many birthday wishes I received in my facebook, so much love from so many of my friends!

So, from not expecting any sort of celebrations to receiving so many things from loved ones and closed friends, it was a truly blessed birthday for me.  

A handful of closed friends know that there were a few major changes in the family these couple of years, it is especially difficult for us earlier this year but things started to settle down as we eased ourselves onto the new routine.  It was extremely stressing and difficult for me, however I am heartened to see the transformation of DinoBoy, from a boy who defies all rules and reasoning to a boy who shoulder some responsibilities with me.  

Today I celebrated another "victory" silently.  This morning I asked him if he's been seeing the school counselor and his reply makes me want to leap high up into the air and shout for joy!  He said that he has not been seeing her and "Ms Doreen said that if she did not see me means I am getting better."  Can you imagine the joy I felt inside me?  I am so so so proud of my little boy!

Perhaps the wish I had as I blew out the birthday candles on my birthday cake that day is going to come true, perhaps  things are going to be better soon.

Copy Me That - Copy, Plan, Shop

Yesterday a friend asked in one of a home cooks facebook group if there is any app that any one can recommend that has the meal planning function.  A member shared that she's using an app called Copy Me That and she's also giving thumbs up for it.  Of course I immediately went to check that out, downloaded the app and tried to explore it.  This app runs on both iOS and Andriod so every one can enjoy it.

Well, it is kinda difficult to explore in on the phone IN the office, I was afraid that my bosses will walk past my table and caught me with my face plaster to my phone.  So I Google it and viola~ they have the desktop version too!  Best part is the desktop version and mobile app are sync so that you can access it anywhere.

The first thing you do after you set up an account with Copy Me That, either using facebook or with email, is to add the Copy Me That button onto your browser.  This button can be added onto the desktop o mobile phone browsers.  Once added, you will see this small icon of ladles at the top right hand corner of the browser.

After that you can start to browsing for recipes and start saving them in Copy Me That.  It is really very simple, for example, you found my Minion Banana Custard Cheesecake (of course I have to use my own recipe right hehehe~) and wish to make them later, just click the Copy Me That button and it will be added into your recipe page.

Click on the Recipes tab at top and you will see something like the photo below.  Beautiful isn't it! Every thing are being automatically imported into it plus photo too!  I don't even have to do anything except minor changes or notes and to add a tag to the recipe for ease of searching in future.

I can even key in recipes I printed out ages ago by clicking on the New Recipe tab on the top right corner.

After you are done, be sure to click Confirm to save your recipe.  By doing so you not only can edit the recipe freely but also able to add the ingredients in the recipe to the Shopping List function.

The beauty of the Shopping List function besides adding all the necessary ingredients, you can choose to sort the list by Recipe or Category such as Herbs & Spices, Dairy & Eggs, Baking etc.  You can also use the Add Item button to add in other stuffs you need to buy like your kitchen towel or other groceries.  Thus you will have ONE Shopping List for all the necessary items you need, and get it done in one supermarket visit.  No fear of printing out this shopping list and have to write a separate one for other necessities.

Next, this is the most exiting part for me, Meal Plan!  After you have saved your recipes, you can also send them to Meal Plan, either add them to queue (which are the recipes in the yellow box in the photo below) to be added into the Meal Plan later or add them to a specific day/date that you want to cook it.  The Meal Plan also allows me to add notes on individual day, I've decided to put in the dishes that I have cooked on each day so that I will not repeat them for the next couple of weeks.

It is just so simple! And to top it all, there is a Print function too so you can print out your Shopping List, Meal Plan and Recipes.  And if you are like me who love to pin recipes in Pinterest, it is even more convenient to pull out recipes from there to Copy Me That.  

Since I started to cook for the DinoFamily about a month ago, I have wanted to do meals planning but couldn't find an app that enables me to put in the dishes AND the recipe together.  I have a stack of printed recipes stashed here and there for things that I want to cook for that particular day, after its done, it is forgotten until later where I either have to hunt for it or print a new piece.

Copy Me That allows me keep every thing organized under one roof.  No more pieces of paper with the grocery list or recipes.  I am now going to stick with Copy Me That and I will have lesser headache in planning our healthy meals in months to come!

Of course, all cooks or home chefs love to share great recipes and make friends with fellow cooks or home chefs, Copy Me That has a Community where you can do just that.  You can even get connected through facebook too!  

Seriously, for now I have yet to find anything that I do not like about Copy Me That, I am actually smiling as I am typing out this post because finally I have found something that really solve my problem and making my cooking days much more easier and stress free.

Simply Copy the recipe, Plan your meals, Shop for ingredients and you are good to go for making healthy home cooked food daily for your family.
