Foodie Fridays {Linky} - Coca Cola Pigs Trotter

Ingredients
* 1pc Pigs trotter
* 100g raw peanuts
* 1 can of coca cola

Sauce
* 100ml Dark soy sauce
* 100ml shao xing wine or rice wine
* a pinch of five spice powder
* 5 cloves garlic
* 3 slices ginger
* 1 chili
* 2 stalks spring onion
* a pinch of salt

Method
1. Wash and soak the peanuts in water for about 3-4 hours, drained and put aside for use later.
2. Wash the pig trotter, blanch it in boiling water for 10mins then remove it and put it into a bowl of ice water to cool off.  Wash and put aside for use later.
3. Put the pig trotter and peanuts into a pot, add in the coca cola, the sauce, fill it with water till it covers the pig trotter.
4. Bring the water to boil then turn down to small fire, continue to boil for about an hour and its ready to serve.

-  By soaking the pig trotter into the ice water it will enhance the texture of the meat.
- Besides adding a ting of sweetness in flavour & color of the sauce , coca cola also helps to remove the oil from the sauce.  However you have to use the regular coca cola and not coca cola light as the artificial ingredient in it will turn bitter once its heated.
- The chili and salt are optional, I did not put them when I cooked this as DinoEgg still cannot eat spicy food and I do not usually use salt in my cooking.
- The amount of peanuts to put is base on your personal preference, put less if you do not like peanuts.
- You can add in other ingredients that you like, such as mushrooms or tau pok or hard boiled eggs.  We added bean curd in ours the next day.
- Since I used my ShuttleChef to cook this dish since the morning, I am not sure whether the pig trotter will be soft with just 1 hour of boiling using small fire.

  1. Jen you know what. I like pig's trotters but ah, I get freakish to handle the raw meat. :p so never got round to cooking this dish from home.
